Chef Erik Bruner-Yang is passionate about using the power of food to empower others and was invited by World Central Kitchen and Dog Tag Bakery to share his experiences from starting two beloved DC restaurants to the fellows at Dog Tag Bakery.
At the guest demo, the James Beard nominated chef shared lessons he has learned from his journey of starting businesses, growing businesses, and building great teams. Erik shared how he opened Toki Underground when he was only 25 and has expanded his restaurant group to include Maketto, a 6,000 square foot cafe, restaurant, and retail space. After fielding business related questions from the fellows at Dog Tag, Erik taught the class how to fold and cook pork dumplings from the Toki Underground menu.
This demo was part of World Central Kitchen’s ongoing partnership with Dog Tag Bakery. Dog Tag Bakery’s fellowship program empowers veterans and their families through hands-on business experience and offers business classes from Georgetown University.
